Asian Raw 'Noodle' Salad Recipe - Super easy!


Easiest raw 'noodle' salad EVER!

First, get a spiralizer, (spiral slicer) which turns solid veggies into 'noodles'. The one I used is called a Veggetti, and it costs $15 -$20, and you can get an even better one on Amazon here: Spiralizer

So here's the recipe:

1 carrot spiralized on small 
1 zucchini spiralized on small
1/8 of white onion, very thinly sliced and diced (or you could use green onions)
1/4 cup of finely chopped raw almonds

Dressing:

Drizzle the following on veggies to taste:

Rice vinegar
Sesame oil
Toasted sesame oil (go light on this one... strong flavor!)

Mix well in bowl, and season with sea salt to taste.

I love this recipe as it gives the feel of eating a cold noodle salad, with none of the heavy carbs.
