Dark Chocolate, Cranberry and Almond goodies!

These are super easy to make, and they are delicious! 

Only 3 ingredients:

Dark chocolate chips (Enjoy Life brand)

Organic dried cranberries, sweetened with fruit juice (bulk)

Raw almonds (bulk)

No quantities given, as you can make a small batch of just a few at a time, or as many as you like. I used about half of the bag of chocolate chips, which made about 12 clusters. 

Melt the chocolate in a pot that is set inside another larger pot of boiling water. (You could also use a glass bowl inside the pot of boiling water.) Once chocolate is melted, remove the pot from the water, then add the cranberries and almonds. Mix well until everything is coated with the chocolate. Drop by teaspoonful onto wax paper and let chocolate harden. I slid the wax paper onto a cookie sheet and put it in the fridge. 

These are the dark chocolate chips I used. Non-GMO, GF, dairy, nut, soy free, etc.

Raw eating update...

This morning after 2 full days of raw only eating, I was down 3.2 lbs! 

Woo hoo!

Amanda said she was down 5 lbs, Fred of course was down 5 lbs (he's a guy, and they ALWAYS lose weight faster than women, IMHO, except for Amanda!), and I felt great! Lots of energy, just felt 'lighter', if that makes sense.

I really like the all raw thing, but I have to admit that it's a LOT OF WORK! 

I'm not complaining, it's more of a realization that I need to plan way better to keep it going longer than just a couple of days. 

While eating raw we also drank Kangan water, which slides right down your throat very easily... I added a drop or two of lemon oil, and/or metabolic blend, and it's even better. 

I feel great eating this way, but I'm getting 'weak-willed'... it's winter, and cold, blah, blah, blah... enough said.

I'm just happy to know that eating like this works great for me to take off the weight... only 35 lbs to go... HA HA HA!... I will get there... eventually!

Going Raw for a Few Days...

So I decided to join Amanda in doing a mini-cleanse and detox with raw foods. We (Fred and I) started this morning with a strawberry smoothie, which included spinach, hemp hearts, almond milk and some plant based protein powder. One of my favorite raw, non-GMO, plant based protein powders is by Green Smoothie Girl - GSGLife.

For lunch it was a big chopped salad made with spinach, kale, celery, red onion, carrot, Brussels sprouts, baby bok choy, chopped almonds and goji berries. Dressing was a simple apple cider vinegar and olive oil vinaigrette.

Dinner is going to be some pineapple, celery and carrots with cashew 'cheeze' dip. I'm not that hungry so it should be fine. 

I'm soaking some quinoa so I can make a little salad with that too... maybe I will sprout them. Hmm...

And I found a recipe for some cauliflower 'popcorn' made in a dehydrator... I'm really thinking about trying it. It's on the Rawtarian website. I'll let you know how I like it.
