E2L (Eat to Live) - Day 3

Good afternoon,

So I decided to make the Dijon Date Dressing/Dip from E2L, found on page 256. I have to say it's really good. Usually the dressings I like have a lot of olive oil in them, and while that's considered a healthy fat, too much of it is just too much fat.

This dressing uses cashews for the fat, and is spicy/sweet. I think I like dressings a little tangy-er (not sure if that's a word), so next time I'm going to use 3 Tbsp of balsamic vinegar and 1 Tbsp of red wine vinegar instead.

Here's a picture of the salad I had for lunch today, which has baby lettuce, spinach, green onions, carrots, red bell pepper, mushroom and kidney beans. I love beans so eating this way is going to be fun for me.
