Curry Quinoa Salad

I have a bad habit of getting on a kick of certain foods or recipes and making them nonstop until Keith & I are both sick of it and then I don't make it again for a long time. Well this time I am happy to say one of my favorite foods, quinoa, is making a come back after I ran it into the ground last year! So here is an easy recipe for a fabulous curry quinoa salad that I came up with today and love it so enjoy!

1 cup cooked quinoa
1/2 cup raisins (I like the golden but you could also used dried cranberries)
1/2 cup chopped pecans ( you could use sunflower seeds)
1 grated carrot
1 can garbanzo beans drained
1/4 cup olive oil
2 Tbsp apple cider vinegar
2 Tbsp honey
2 Tsp curry (I love the Frontier brand)
salt & pepper to taste

You can adjust this to your taste, more vinegar or honey, but you really can't mess it up.
