Delicious veggie soup for dinner... yum!

Fred and I made a delicious veggie soup tonight, and I thought I'd share the recipe:

In a large soup stock pan, saute 2 chopped carrots, 1 chopped yellow onion and 3 stalks of celery in a couple of Tbsp of olive oil until cooked through.

In a separate cast iron skillet, saute in a little olive oil, 2-3 cloves chopped garlic, 1 large kale leaf finely chopped, and 1 medium red potato finely chopped. I also added a splash of balsamic vinegar and a little red wine. The kale will turn brown and get crunchy... delicious.

After the carrots, onion and celery are cooked, add 6-8 cups of filtered water. We also added 8 oz of Pacific brand organic vegetable broth. Stir in the garlic, kale and potato mixture. Bring to a boil.

Add sliced mushrooms. We had some leftover rice from last night's dinner, about 1 cup, and that went into the mix... Next we added some pasta - whatever you have in the house works fine.

Season to taste with sea salt, pepper, whatever you like. Cook about 20 minutes and it's ready to enjoy.

My soups usually all taste the same, and this one does NOT taste like them - it's way better. I think this is now my new basic veggie soup recipe. I hope you like it...
