ZUPICA Muffin recipe

ZUPICA Muffin recipe:

1.5 C shredded zucchini
1.0 C cut up fresh pineapple
0.5 C shredded carrots

Prepare above and set aside.

In a large bowl combine and mix the following with a hand mixer on low speed:

2 medium semi-ripe bananas, cut in small pieces
1.0 C canola or other veg oil
1.5 C organic sugar
2 tsp vanilla

Next add to the banana mixture using hand mixer, low speed:

2.0 C whole wheat flour
1.5 C white flour
2.0 Tbs ground flax seeds
1.5 tsp baking soda
1.0 tsp baking powder
1.5 tsp sea salt
2.5 tsp cinnamon
0.5 tsp ground cloves

Stir in with large spoon the shredded zucchini, carrots and pineapple. Then add:

0.5 C chopped walnuts (or other nut)
0.5 C raisins

Once all ingredients are mixed well, spray muffin tin with Pam or use oil or paper cup liners.

Bake at 350* for 30-35 minutes until done. I used a big muffin pan, but for smaller muffins, you may have to adjust baking time, so watch them.

Muffins are dense and will be a little moist. Remove from pan and let cool.
