Delicious vegan pancakes

My husband Fred wanted pancakes this morning, but we had no eggs. I decided to come up with an egg-free pancake recipe to see how it would turn out, and it was actually pretty good. So here's what I came up with:

Marti's egg-free pancake recipe:

1/2 cup buckwheat or whole wheat flour
3/4 cup all purpose flour
1/4 - 1/2 cup organic cane sugar
1 tsp baking powder
1/4 - 1/2 tsp Real Salt
4 oz 'So Delicious' Coconut Milk yogurt - Vanilla
3/4 - 1 cup 'Pacific Foods' Hazelnut milk

Mix it all together and adjust milk as needed for consistency you like, then cook them up. This recipe makes 6 pancakes that are approximately 5" in diameter.

We have them with 'Earth Balance' buttery spread and honey. Delish!
